Are you overriding in your which macros are provided to
the milters at various stages of the smtp conversation?

If you add "LogWhy Yes" to your opendkim.conf and restart opendkim, it
should log messages about its decision making process when determining
whether to sign. Examples:

Oct 18 04:02:06 webmail1 opendkim[20556]: p9IB25lZ003729: no signing
table match for '
Oct 17 13:45:25 mail1 opendkim[20874]: p9HKjK4U007584: can't parse
From: header value ' postoffice'

As opposed to valid signatures being inserted (example is munged by me) :
